Riesling Renano, Müller Thurgau and Traminer grapes yearly varying proportions.
The Vineyard faces south at 420 meters s.l.m. on clay and tuff soil, Cordon grapes, 4,500 vines per hectare. Organic cultivation, manual harvest. The Riesling Renano, Müller Thurgau and Traminer grapes are harvested together at full maturity and pressed together with soft pressing. Fermentation and maturation take place in steel tanks at a controlled temperature. The racking and bottling in spring arrive after the winter in contact with the lees and before the six months of rest in the cellar.
The Castello di Stefanago is a family-owned winery, built through years of hard work over several generations. The people, their commitment and passion, the connection to the land and respect for nature, the constant search to improve in the tradition, these are the elements that tell the story of the winery.
The winery is located in Lombardy, in the Oltrepo Pavese hills, between 350 and 500 meters above sea level. The wine cellars are housed in a XI-XIV century castle surrounded by verdant farm lands. Grapes are sourced from 20 hectares of individual vineyards, spread throughout 135 total hectares of meadows, forests, orchards, and arable farmland. This small-plot approach maintains the biodiversity of the environment, and optimizes the quality of the harvest by planting only on land with the most ideal conditions for grape cultivation.
The grapes are the most fundamental and irreplaceable ingredient for the wine production. Antonio and Giacomo Baruffaldi have been committed to 100% organic cultivation since 1998. They work in the vineyards year-round to cultivate healthy natural grapes which are harvested at the precise level of ripeness.
The Castello di Stefanago grapes are locally grown and vinified. They are the result of natural and meticulous cultivation and hand harvesting. As the soil is fundamental to the quality of the grapes, the grapes are fundamental to the character of the Castello di Stefanago wines. In the wine cellar the process is both delicate and precise, the natural rhythms are respected and the individual characteristics of each grape are encouraged. We follow ancient winemaking methods with long refining periods in large wood barrels and bottles. Our wines have low sulfur residue: red wines between 10 and 40 mg / l, white wines between 30 and 50 mg / l, and the sparkling wines are around 50 mg / l. The presence of sulfur is minimized by the vitality of natural yeasts present in our premium-quality organic grapes.
Our goal is to simply and naturally express both the vineyard and the local geography in our winemaking. The grape is an expression of this local landscape, and with minimal intervention we allow it to naturally transmit this unique personality to the wine.
