Today, I'm going to introduce you to a mussel vongole pasta recipe that you can easily make at home. The combination of delicious seafood and al dente pasta is really delicious. Now, let's start making vongole pasta.
Vongole pasta recipe
Ingredients (for 1 serving)
- 100g spaghetti noodles
- 300g mussels
- 3 tbsp olive oil
- Garlic puree
- A pinch of salt
- A pinch of pepper
- Parsley
Cooking instructions:
1. Prepare the mussels
Wash the mussels in cold water and remove the mussel beards.
If you see any broken mussels in the middle, take them out separately. (You can tell if they're okay to use by smelling them.) If possible, just eat them as is:)
Pour a little water into a large pot and cook them with steam. When the clams open their mouths, turn off the heat and separate the shells from the flesh. Separate the naturally formed mussel broth (can be frozen) You can add white wine when boiling, but if the clams are fresh, you don't have to.
2. Boil the pasta
Boil water in a large pot, add salt, add spaghetti noodles, and cook al dente for the time indicated on the package. (Approximately 8-10 minutes)
3. Make the pasta
Add the prepared mussel broth, garlic puree, and pasta noodles to the pan and cook together. Add salt, pepper, or peperoncino to taste. Add extra virgin olive oil and mantecaré so that the broth and oil are well emulsified.
4. Finish
Put the pasta on a plate and top with parsley and reggiano cheese if desired
